How to make EggNog (fully cooked, non-alcoholic version)
Here’s the print version of the recipe…
4 egg yolks
4 egg whites
1/3 cup sugar
2 cups whole milk
1 cup whipping cream
1 tsp nutmeg
In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved. Set aside.
Mix milk and whipping cream
Bring to a boil, stir occasionally.
Temper into the egg/sugar mix.
Heat to 160º F
Beat egg whites to soft peaks.
Add 1T Sugar
Fold whites into milk/egg
Grate nutmeg.
Serve warm or chilled.
